- Quinoa: [kinwaah] is from South America. It was bred by the Incan people to have huge heads of seed, but the basic plant has delicious edible leaves that make a fine substitute for spinach.

- Ulluco: A plant grown primarily as a root vegetable. The leaf and the tuberous root are edible, similar to spinach and the potato, respectively. Udo: A perennial Japanese plant having bipinnately compound leaves and young shoots that are cooked and eaten as vegetables

- Watercress:It's naturally found growing in gently running water forming dense mats. Natural springs, bogs, streams, and river banks are the most common locations. Unlike most other plants, the roots of watercress prefer to be waterlogged; watercress is also more prevalent in slightly alkaline waters
- Xingua: It is a watermelon which is a fruit but it is teticly a vegetable.
